Don’t be frightened by its name. There is nothing “posh” about Eggplant Caviar. It’s fun and easy to make, the primary ingredients being eggplant, tomatoes and onions. A few seasonings. A few herbs. Viola.
This is a dish, however, that is best used the day it is made. So, I halved the recipe and, first, used it with pita crisps as an afternoon snack.
For dinner, I roasted some peppers and made a sandwich: Nine Grain Bread, Eggplant Caviar and Roasted Peppers. Dories’s idea, not mine, and it was delicious.
I will make this Eggplant Caviar again and again to use as a nutritious and very flavorful sandwich spread.

I like the concept of using this as a spread on a sandwich. Some sprouts, baby spinach, avocado… MMMMM

You absolutely get extra credit for roasting on a roasting hot day. I did mine in the toaster oven (but with only one eggplant so do-able). Your roasted peppers look beautiful.
I loved this dish…reminded me of baba ganoush…one of my favorites! Yours looks absolutely delicious! I love that you served it as a spread for a sandwich with roasted red peppers. Yum!

I roasted red peppers at the same time as the eggplant, too … wow, did my house ever smell so good!!

Even when I was doing this at the last minute on Friday night, I kept thinking “am I really turning on the oven for another hour at 400??” It is still nasty hot in Philly, but Friday is Friday and since Nana and I are taking turns- I wanted to soldier on. I actually really love the concept of this healthy dish. Plus I was relieved there was no caviar involved. Nana did not enjoy it too much but when I have more time and make a 2nd batch I will definitely try to get her to give it another shot. I think if I got the lovely bread and peppers like you had, she would have been on board immediately !
